Fodmap Friendly: Quinoa Cinnamon Roll Porridge.
For one serving:
1/3 cup quinoa*
2/3 cup water
Cook in a pot on a low-medium heat until it thickens. It’s just like cooking porridge (oatmeal) and it only takes a few minutes. I stir it the whole time because I hate lumps and having to scrub burnt pots.
When it’s done, add a little butter, a teaspoon or two of brown sugar and between 1/8-1/4 teaspoon of cinnamon. Or less. Or more. Do what you want. Then mix and serve with whatever kind of milk you can tolerate. I use full fat lactose free because it’s creamy. But I have a feeling coconut cream would be good too.
*This works with oats if you can tolerate them. If you want a larger or smaller serving then just make sure you keep the 1:2 dry-to-wet ratio.
